This Easter Sunday try the best lamb kebab you have ever tasted.

Ingredients

  • 500 g quality lamb, trimmed and cut into 2.5cm cubes
  • 6-8 skewers or sticks
  • fresh rosemary, lower leaves removed, tips kept on
  • 2 red onions, peeled and quartered
  • 2 red peppers, deseeded and cut into 2.5cm pieces

For the marinade

  • 1 tablespoon smoked paprika
  • 2 cloves
  • ½ teaspoon cumin seeds
  • 2 teaspoons coriander seeds
  • sea salt
  • freshly ground black pepper
  • olive oil

Directions

First bash up all the spices in a pestle and mortar until fine, then mix with the oil to make a thick marinade paste. Put the lamb pieces into a bowl and cover with the marinade. Let them sit there for half an hour to an hour. Then, using the rosemary sticks or skewers, spike each piece of meat alternately with red onion and peppers. Grill for around 5 minutes, turning regularly, to give you nicely charred meat on the outside with juicy pink on the inside. Allow to rest for a few minutes – that is, if you can stop yourself eating them straight away!

With the summer weather starting to hit Medford, Oregon it is the perfect time for a barbecue!  The hamburger is an important part of any BBQ, so here are 5 tips to making the perfect burger:

  1. The perfect burger doesn’t start off with just any meat, beef with a 15%- 20% fat content is ideal for making a tasty burger.
  2. Don’t ever cook a frozen burger, take the time to defrost your frozen patties, it is well worth the wait time to properly cook your beef.
  3. Instead of just sprinkling spices on top of your patties mix your spices directly into the meat.
  4. Make sure to only flip your patty once so that it can get the ideal sear, this will seal in the delicious juices that are lost by over flipping of the meat.
  5. Remember to toast your burger buns to make sure that they don’t get soggy.

How to Make the Most Delicious Baby Back Ribs

With only 22 days till Catersource and Event Solutions Conference & Tradeshow we wanted to share a great recipe from Dave Lieberman and Food Network for some savory Baby Back Ribs!

Tasty barbecue ribs that can be grilled on an Iron Horse BBQ Grill.

Total Time: 1hr 40min

Ingredients:

  • 2 racks baby back ribs (about 2 1/2 pounds)
  • 1 recipe Bourbon Barbecue Sauce

Directions:

Preheat oven to 350 degrees F.

Cut the racks of ribs in half crosswise. Rub the ribs, paying special attention to the meaty side, with 1/2 cup of the sauce. Lay the rib pieces meat side down in an 11 by 13-inch baking dish. The pieces will overlap slightly.

Cover the dish tightly with aluminum foil and bake until the meat begins to pull away from the ends of the bones and the ribs are just tender, about 1 hour. You can bake the ribs up to a day before and keep them refrigerated. Bring refrigerated ribs to room temperature about 1 hour before you grill them.

Preheat an outdoor grill to medium-high heat. Grill the ribs, brushing them with about half the remaining sauce, until they’re crispy and heated through, about 10 minutes. Move the ribs around as they grill, the sugar in barbecue sauce makes it easy for them to burn. Let the ribs rest for 5 to 10 minutes before cutting them into 1 or 2-bone pieces. Put out the rest of the sauce for dipping or brush it over the ribs.

Turning the Heat Up

With Catersource only 36 days away, Iron Horse BBQ is going to be counting down the days with you by posting helpful tips related to catering along with delicious recipes that can be made on Iron Horse BBQ grills.  We are going to start it all off with a mouth watering recipe, courtesy of Ree Drummond and Food Network, for the best grilled chicken you have ever tasted!

Grilled Chicken Recipe

Ingredients

  • 2 cups olive oil
  • 6 tablespoons honey
  • 3 heaping tablespoons Dijon mustard
  • 1 tablespoon salt
  • 2 teaspoons ground thyme
  • 2 teaspoons ground oregano
  • Juice of 12 lemons
  • 24 boneless, skinless chicken breasts

Directions

  1. Mix together the olive oil, honey, mustard, salt, thyme, oregano and lemon juice in a large shallow container.
  2. Pound the chicken breasts to uniform thickness and add them to the marinade. Cover and marinate in the fridge for at least 8 hours.
  3. Heat a grill pan over medium-high heat. Grill the chicken in batches until golden brown on the first side, 4 to 5 minutes. Flip and cook until golden brown on the other side and cooked all the way through, another 4 to 5 minutes. Let the chicken cool.
  4. Transfer the chicken to freezer bags individually and in pairs, so it’s easy to defrost the exact amount you need.
